Description

Pistus Etna Rosso DOC Bio is a red wine made by the I Custodi delle Vigne dell'Etna winery. It is largely obtained from the vinification of grapes of the autochthonous Nerello Mascalese variety, with the addition of 20% of another local vine, Nerello Cappuccio. The vines rise about 650 meters above sea level on the northern slope of the Sicilian volcano. From sandy soils rich in minerals, plants draw all the necessary nourishment. The grapes acquire great refinement, maturing until the manual harvest. In the cellar the vinification begins with the destemming-crushing. The subsequent fermentation on the indigenous yeasts involves contact maceration on the skins for a week. This step involves the use of innovative concrete tanks. To refine, the wine is always placed in concrete tanks for about 9 months. Perfect immediately, Pistus Etna Rosso DOC Bio boasts a good potential for evolution up to 2-3 years.
