Description
Praeclarus Pas Dosé Spumante Blanc de Blancs Alto Adige DOC is produced by the Kellerei St.Pauls winery. It is obtained from the single-variety vinification of Chardonnay grapes, grown in the suitable area of Appiano. The dolomitic soils, rich in limestone and sand, the south-east exposure and the winds that blow from the overhanging peaks favor the luxuriant growth of the grapes. Once ripe, the bunches are harvested by hand and taken to the cellar for soft pressing. The first fermentation takes place inside large wooden barrels. In line with the Classic Method, the second fermentation in the bottle, which in this case lasts for 5 years, allows the wine to refine for a long time on its lees. Before being put on the market, disgorgement is foreseen without adding any additional liquid. Praeclarus Pas Dosé Spumante Blanc de Blancs Alto Adige DOC can be opened with satisfaction immediately, as well as after 3-4 years of rest in the cellar.
