Description
Primiter Primitivo Salento IGP is a fine red wine from the Michele Calò & Figli winery. The label is obtained from the single-variety vinification of Primitivo grapes, a local variety known and loved since ancient times. The plots are located near Lobia, where the lands rich in iron and tuff guarantee the vines the ideal nutritional supply for luxuriant growth. At the end of August, the bunches are selected and picked by hand following a slight over-ripening in the vineyard. In the cellar, a long maceration on the skins lasting over 10 days is foreseen. Once the fermentation is complete, the refinement is divided into two lots: 60% rests in stainless steel, while the remainder in oak barrels. After a year, the wine is bottled and left to rest for another 6 months before being marketed. Primiter Primitivo Salento PGI can be enjoyed with satisfaction immediately, as well as after an evolution of another 3-4 years.
