Description
Ravera Barolo DOCG is one of the magnificent products of Elvio Cogno 's cellar. The winery is located in the Novello area and has been carrying on a great winemaking tradition for years. The grapes come from the Nebbiolo vines which grow at about 380 meters above sea level on mainly calcareous, clayey soils rich in mineral salts. The climate of the Langhe is conditioned by the cold Alpine currents, but mitigated by the currents of the Tanaro river, unique peculiarities that give the wine an unmistakable flavour. During the harvest, the bunches are carefully selected, so as to allow only the best to reach the cellar. The fermentation in steel requires very long times, the maceration of the wine involves the submerged cap procedure for about a month, while the refinement requires a duration of 24 months in wooden barrels. Ravera Barolo DOCG is the classic wine that can be drunk immediately, but can evolve well resting in the cellar for over 10 years.
