Ribolla Gialla 'Opoka' Marjan Simcic 2019

Ribolla Gialla Opoka is a mineral white wine produced by the Slovenian winery Marjan Simcic . It is obtained from the single-variety vinification of Ribolla Gialla grapes, a local variety that expresses itself in an excellent way within the BRDA denomination (the Slovenian Collio). On calcareous soils, the vines over sixty years of age find the ideal terrain to thrive. The western exposure to the sun and the organic cultivation contribute to guaranteeing optimal conditions up until the strictly manual harvest. Once in the cellar, the grapes are gently pressed and then left to ferment spontaneously inside oak vats. After a week, the wine is ready for aging which lasts for almost two years in oak barrels of various sizes. Finally follows a one-year rest in glass, before being put on the market. Excellent immediately, Ribolla Gialla Opoka is a white that also lends itself to long evolutions of over 7-8 years.
