The Collio yellow Ribolla, famous for its versatility in winemaking, lends itself to the second fermentation while maintaining its peculiar characteristics of flavor unchanged and enhancing the freshness of its more spontaneous scents. A soft pressing is followed by a fermentation of the must at a controlled temperature. The subsequent second fermentation with the Charmat method takes place with a long stay on the lees in an autoclave and subsequent refinement in the bottle. Brilliant straw yellow. Bouquet: initially floral with notes of wild flowers, medium complex thanks to the evident hints of natural yeasts and ripe yellow fruit. On the palate the minerality is evident and well balanced, the perlage fine and pleasantly creamy.
