The Rosé version of sparkling wines (and in particular of Champagne) has always been considered by connoisseurs to be the best. And here we do not contradict ourselves: rosé vinification for Pinot Noir grapes (40%), with skin maceration for a few hours to give the characteristic pink color to this excellent Cuvée (in Italian, assembly). Chardonnay (40%) and Pinot Blanc (20%) are vinified in the traditional way. Fermentation and subsequent aging for about 7 months take place partly in temperature-controlled steel tanks (80%) and partly in small oak barrels (20%) where malolactic fermentation also takes place. The bottles are then stacked and aged on the lees for at least 24 months in the rooms of the seventeenth-century cellars before the "remuage". Subsequently "disgorged" and "dosed" in the "Brut" type (sugar less than 12 g/l), they receive the mushroom cap and the cage. Finally, at least two months of further aging is necessary before placing this excellent Franciacorta on the market. A fragrant rosé where the delicate freshness of the Chardonnay is completed by the fruity richness of the Pinot Noir and the soft roundness of the Pinot Blanc. Its blush pink color with golden hues reveals notes of freshly picked currants and cherries, crunchy apricots and wild strawberries, peony petals and blood orange, with a delicate nuance of fresh almond and cotton candy. The sip is lively and sunny, dynamic in the juicy freshness of pomegranate and red apple, with a subtle and vital sapidity.
