The Rosso di Montepulciano DOC Organic wine from the Avignonesi winery represents an excellent wine that can be considered the visiting card of this territory. In fact, only Sangiovese grapes are used for its production, grown on hills at an average height of 400 metres; the vineyards are between 10 and 25 years old and the cultivation takes place following the dictates of organic farming, in order to respect the territory. The harvest of the Rosso di Montepulciano DOC Organic wine takes place over a long period between the beginning of September and the end of October, selecting the bunches according to the degree of ripeness. The fermentation takes place in large stainless steel vats only thanks to the indigenous yeasts and lasts between 10 and 20 days; the subsequent malolactic fermentation takes place instead in oak barrels. The refinement lasts about 9 months before proceeding with bottling, obtaining a full-bodied and well-structured wine that is characterized by easy drinking. Perfumed, elegant, with a good backbone and a discreet presence of tannins, it accompanies a nice dinner of red meats.
