Rum Chairman's Reserve White is one of the flagship distillates of St. Lucia Distillers, a small Caribbean distillery that produces some of the best Rums in the world. As can be understood from the name, it is located on the island of Saint Lucia, in the middle of the Caribbean Sea, in an area known for its alcoholic blends. The process for making Rum is the classic one and has now been going on for 2 generations, but also making use of new production techniques. The sugar cane molasses is fermented for a long time in open tanks, and then subjected to distillation. The stills used are the traditional ones, but more modern column appliances are also used. To give the unmistakable flavor of Rum, used oak barrels are used, in which the long refinement of the distillate takes place. The final result of the process is precisely the Chairman's Reserve White Rum, a balanced product yet capable of enclosing all the exuberant essence of the Tropics.
