    If the Apulian viticulture has an ancient and glorious history, at least 2000 years of life, it must also be said that the true wine renaissance of the Tavoliere started 20/25 years ago. In the 1900s, in fact, Puglia and Southern Italy, in general, were known for the production of very alcoholic, impenetrable, indomitable red wines. They are the famous "cutting" wines, i.e. to be mixed with other weaker, lighter wines from Northern Italy and Northern Europe. But with the advent of modern enology, the machines and advanced techniques for cultivating and making wine in quality, here is a real miracle and a productive, as well as commercial, boom in Puglia: the indomitable red wines of Puglia become balanced wines, complex and refined . The word Quality enters the vocabulary of Apulian viticulture and here is a proliferation of small wineries that not only want to produce excellent red wines, but also care about the protection of the environment, traditions and, above all, the enhancement of native vines, for too long forgotten in favor of grapes and quantity targets. In addition to the well-known Negroamaro and Primitivo , extraordinary grapes and wines emerge such as Nero di Troia , Malvasia Nera and Susumaniello which, moreover, with the aim of making themselves known, are offered as Apulian red wines with excellent value for money, above all in online sales: these are truly unmissable "wine opportunities", convenient and of great sensory pleasure. Even the Riserva versions of the great Apulian red wines have ever-growing admirers: nectars with long aging in oak barrels which refine, and at the same time enrich, their power and elegance. We also find other red grapes in Puglia which are often used in the most prestigious blends, such as Sangiovese and Aglianico. The best known areas are undoubtedly that of Manduria (for the Primitivo) and the aforementioned Salento (with many versions of Salice Salentino doc and Leverano doc), but excellent red wines also emerge with force from lesser known denominations, such as Castel del Monte doc and Malvasia Nera Salentina.
