Description
Sass Roà Cabernet Sauvignon Alto Adige DOC is a structured red wine, made by the Dolomite winery Laimburg . It is obtained from the vinification of only grapes of the international Cabernet Sauvignon variety. The plots are located near Lake Caldaro at about 300 meters above sea level. The substrates of morainic origin are rich in clay and sand, two elements which contribute to supplying the vines with the nourishment necessary for luxuriant growth. When they reach the optimal degree of ripeness, the bunches are subjected to manual selection before being transported to the cellar. Here the alcoholic fermentation takes place at a controlled temperature, which involves the use of modern steel tanks. The refinement lasts just under 2 years and takes place in oak barriques, and then continues for another 4 months in the bottle. Excellent immediately, Sass Roà Cabernet Sauvignon Alto Adige DOC can further evolve for up to 5 years.
