A sparkling wine made entirely from Chardonnay, a Blanc de Blanc, the French would say, which is fermented for 40% in barriques and the remaining 60% in steel tanks. Then we have the maturation, which lasts at least 36 months in the rooms of our seventeenth-century cellars before the "remuage". Subsequently disgorged and dosed "Brut", the bottles receive the mushroom cap and the cage. Finally, at least three months of further aging are necessary before placing this Franciacorta on the market. The refinement of a shiny gold goblet with a thick and creamy perlage is revealed through clear and intense aromas. The aromatic profile is enveloping, and the sweet notes of bergamot, jasmine blend with the fresh spices of anise and white pepper, where peach and lychee with a touch of almond candy and butter brioche soften the drink. The sip has a fine and rhythmic regal gait, and seduces the palate with the joyful alternation of mint and dried fruit, where a savory note is not missing to give a delicate persistence. Great sparkling wine!
