Description
Sauvignon Blanc Alto Adige DOC is made with great care and passion by Cantina di Caldaro - Kellerei Kaltern . It derives from a careful selection of grapes cultivated in part with the guyot system and the rest with the pergola system. The vineyards are located at an altitude between 350 and 400 metres. The soils are calcareous-clayey in character with exposure to the south and east. The harvest is carried out only when the grapes have reached the right degree of ripeness. Then follows destemming, cold maceration and soft pressing. The must ferments in steel containers at a controlled temperature, where it then rests for 4 months before bottling. At the end of this production process, Sauvignon Blanc Alto Adige DOC Cantina di Caldaro reveals itself as an excellent white, with characteristic herbaceous and mineral notes, typical of the mountain area in which it grows. It is a particularly delicate and fresh wine that shows its best when drunk immediately.
