The Sauvignon from the Tiefenbrunner winery is a wine that represents one of the best expressions of white winemaking in Alto Adige. From the vineyard to the cellar, every small gesture of the Tiefenbrunner company is aimed at enhancing an extremely aromatic fruit, drawing the best from the characteristics of the grape. Sauvignon is made by vinifying the grapes of the international vine of the same name in purity. The harvest takes place exclusively by hand in the vineyards rich in clay and limestone that characterize the property of the Tiefenbrunner estate. Once the bunches have been pressed, the production process continues with fermentation in steel, which seals the scents of the must. It all ends with a period of four months of aging on the lees, always inside steel containers. The final result is Sauvignon, a balanced and fresh white wine which should be best enjoyed when young, when it can fully release all aromatic hints.
