Sauvignon Vert 'Classic' Marjan Simcic 2021

Sauvignon Vert Classic is a white wine with intense aromas produced by the Slovenian winery Marjan Simcic . It is obtained from the single-variety vinification of Sauvignon Vert grapes, a term with which the Friulano vine is locally identified. On the calcareous and marly substrate typical of the Brda appellation, the vines find the ideal soil for producing elegant grapes. The plots facing south-west are managed according to the principles of organic viticulture up to the moment of the accurate harvest with manual selection. A quick maceration on the skins, which can last up to a maximum of 24 hours, is followed by the fermentation of the grapes on the indigenous yeasts in large stainless steel tanks. The refinement lasts at least 8 months and includes a rest on the lees in steel vats. Excellent immediately, Sauvignon Vert Classic can give pleasant surprises even after 3-4 years of careful storage in the cellar.
