Description
The Savigny-Les-Beaune Villages Vielles Vignes is one of the reds of the Domaine de Bellene. The Domaine de Bellene is located in Beaune, in the Côte-d'Or of Burgundy: the soil is mainly calcareous, while the climate is temperate, with frequent showers. The Savigny-Les-Beaune Villages Vielles Vignes is 100% Pinot - Noir, produced according to the principles of organic agriculture. The fields are plowed with the help of strong and robust draft horses, so that the plowing can be as respectful as possible of the land planted with vines. The vinification begins in the cellar with the choice of the best bunches; the latter are macerated with a light pressing, while the fermentation is carried out in stainless steel tanks. The refinement of this wine is completed in oak barrels, where it spends about twenty-five days at a controlled temperature. In the end, an intense red is obtained, which cannot be tasted before a few years after bottling.
