The centuries-old presence of Ribolla nera, the vine with which Schioppettino wine is produced, in the Judrio Valley is very probable, even if the first document attesting its existence is from 1863. A native vine difficult to manage and make into wine, today it is re-proposed in a modern key by a handful of heroic producers ready to spread its presence. This Schioppettino, after careful vinification, rests for about 8 months in steel tanks. Slightly filtered in respect of its integrity, it is subsequently bottled. Before being placed on the market, it lies in the dark and silence of the company cellar. Purplish red color with an aroma underlined by small red fruits and spices; over time it acquires irresistible notes of undergrowth. On the palate, it has a marked acidity and a pleasant savory note. Full-bodied, not particularly alcoholic. Long persistence of the sip. to try!
