Description

The Champagne Brut Sélection of the Paul Clouet winery is obtained from a skilful blend of Pinot Noir grapes for 40% and Chardonnay and Pinot Meunier grapes respectively for 30%. The vineyards are located on the southern slope of the mountains around Reims, characterized by a particular soil structure and very favorable climatic conditions. In this way, the plants grow luxuriantly and provide delicious grapes. The winery has been operating for several years in the production of wines and champagnes of exceptional value, obtained from a skilful blend of experience and innovation. To obtain the Champagne Brut Sélection, we start with the harvest done by hand, in order to carefully select the best bunches. After a soft pressing, the fermentation takes place in steel, before maturing on the lees for a long period, for at least 24 months, and then refining directly in the bottle. In this way a perfectly balanced, refined and persistent Champagne is obtained, with an excellent drinkability, fine and truly elegant perlage, to be consumed both as an aperitif and during a fish-based dinner.
