'Simply Pink Wine' Cascina degli Ulivi - Bellotti 2021

Simply Vino Rosa is a rosé wine produced by the Cascina degli Ulivi Bellotti company, an artisan company in the Piedmont area. The grapes used to produce this wine are of the Merlot variety, a vine that expresses itself elegantly on clayey and ferrous soils. On the vineyards owned by the winery, which boast vines over thirty years of age, the bunches have the ideal conditions to reach full maturity. In the vineyard, the work is carried out meticulously, inspired by the principles of biodynamic agriculture. The vinification activities begin with a delicate pressing phase with rapid permanence on the skins. The subsequent fermentation on indigenous yeasts takes place inside large oak barrels. In line with the biodynamic philosophy, the wine is bottled without undergoing the filtration process. Simply Vino Rosa is excellent to drink shortly after bottling, when it is possible to better appreciate the varietal scents of the grapes. A natural, sincere, delicate, clean and highly drinkable wine.
