Description

Sette Spumante Metodo Classico Extra Brut Rosé is made by the Buvoli - Opificio del Pinot Nero winery from Vicenza, which manages to enhance the unexplored potential of the terroir. It is obtained from the vinification of Pinot Noir grapes, an international variety that is cultivated with passion by this reality. Among the rows the work is inspired by the principles of biodynamics and culminates with the manual harvest. Only the best bunches arrive in the cellar, where they are macerated for a few hours in order to obtain the typical colour. The alcoholic fermentation takes place in steel vats and is followed by the second fermentation with the addition of a percentage of reserve aged in wood. The wine rests on the lees for at least 7 years after the refermentation in the bottle required by the Classic Method. During disgorgement, a minimum percentage of liquer d'expédition is added. Perfect immediately, Sette Spumante Metodo Classico Extra Brut Rosé manages to pleasantly surprise even after a further evolution of 5 or 6 years.
