Description
Sheep Coda di Pecora Terre del Volturno IGP Bio is a white wine produced by the Campania winery Il Verro . The wine is obtained from the single-variety vinification of the local Coda di Pecora vine. It is a rare variety, whose name derives from the shape of the bunch which resembles the animal's tail. On the plots at the foot of the Volturno, the substrates of volcanic origin give great minerality to the grapes. The vines rise about 300 meters above sea level on predominantly clayey soils. Once fully ripe, towards the beginning of October, the bunches are harvested by hand. In the cellar, the grapes are delicately pressed and left to ferment in steel tanks. Then follows an aging on the fine lees which always takes place in steel tanks and lasts for about 5-6 months. Sheep Tail of Pecora Terre del Volturno PGI Bio is excellent immediately, as well as after 2-3 years of rest in the cellar.
