Sherry Dry Sack Medium Jerez-Xérès-Sherry DO Williams & Humbert

Sherry Dry Sack Medium is one of Williams & Humbert's blends. This company is located in Jerez de la Frontera, Spain; here, thanks to over a century of hard work, the cellar has specialized and established itself in the production of fortified wines. The sherry in question is produced from the palomino and pedro ximénez vines, the most used for this production, which thrive thanks to the mild climate produced by the nearby Guadalquivir and Guadalete rivers. The harvested grapes undergo different vinification processes; even after the short fermentation of the must, the wine is mute. Once the master cellar master has assembled the sherry, it is left to age for about 6 years in pyramidally stacked wooden barrels, following the so-called Soleras method. The finished product is Sherry Dry Sack Medium: a full-bodied and structured fortified wine, even better when consumed young.
