'Solera Pedro Ximenes' Border Sherry DO 20 Years Williams ' Humbert 50 Cl Astuccio

The Solera Pedro Ximenes 20 Anos from the Williams & Humbert winery is a fortified wine made from 100% Pedro Ximenez grapes which are left to dry naturally for a couple of weeks before starting fermentation. The vinification and maturation process, which lasts 20 years, follows the Soleras method, a technique already known for over two centuries in Portugal and Spain. In practice, the wine is placed in wooden barrels which are placed on top of each other. As new wine is added, the one already present is decanted into the barrels below (which are left 1/3 empty) in order to have a richer and richer in flavor as time passes. Solera Pedro Ximenes 20 Anos is produced in Jerez, in southern Spain, a climatically very favorable area for this type of cultivation. The result is an overbearing but fresh fortified wine, perfect for an after-dinner dessert.
