Description
The Spumante Metodo Classico Extra Brut Rosè is produced at the Buvoli-Opificio del Pinot Nero cellar in Gambugliano. It is a young company whose production principles are based on biodynamics. The grapes come from the Pinot Noir vineyards, located on soils rich in limestone and clay, where the continental climate favors optimal ripening of the plants. After the harvest and the selection of the best bunches, the grapes are pressed and following contact with the skins, the must is vinified in white. For this cuvée, a long aging of the wines in wood is foreseen, while a part is refined in steel to give greater freshness. Fermentation takes place in steel following the principles of the Classic Method, with a stop on the lees for at least 36 months. The Spumante Metodo Classico Extra Brut Rosè is a dry and persistent wine, ideal for immediate tasting, but it can also rest in the cellar for 2 or 3 years.
