The steep hills located around Valdobbiadene, in the province of Treviso, have for years been the ideal place for the cultivation of Glera grapes which are the basis for the production of Prosecco di Valdobbiadene Superiore Extra Dry from the Col Vetoraz winery. This company boasts a very high experience, since 1838, in the viticulture and enhancement of the products of this territory. The Glera vine, completely native, grows perfectly thanks to the clayey soils and the favorable climatic conditions, thanks to the mountains that protect the crops both from the cold northern winds and from temperature changes. The grapes to obtain this excellent prosecco, a typical expression of the sparkling wine tradition, are harvested between the end of September and the beginning of October, when they have reached a high sugar content. After fermentation, the second fermentation takes place with the Charmat method and subsequent aging on the lees. The result is an elegant and refined prosecco, with a delicate perfume and a persistent and creamy foam.
