Valmaggiore Audinaggio Roero DOCG is a full-bodied red wine produced by the Piedmontese winery Cascina Ca' Rossa . It is obtained from the exclusive vinification of grapes from the native Nebbiolo variety, grown on the vineyard that gives the label its name. The plot is located about 250 meters above sea level near Vezza d'Alba. Here the vines meet a particularly favorable environment thanks to the sandy substrates and the Guyot cultivation system. Once the perfect degree of ripeness has been reached, the best bunches are selected and harvested by hand. Once in the cellar, the grapes are left to ferment spontaneously with maceration on the skins. This phase takes place in stainless steel tanks with strict temperature control. After about a month, the wine is left to refine for a period of a year and a half in oak barrels on the first and second passage. Valmaggiore Audinaggio Roero DOCG boasts considerable potential to further evolve up to 7-8 years, well kept in the cellar.
