In Leverano, in the extreme north of the province of Lecce, Venus Salento IGP Rosato from the Conti Zecca winery is born. The Salento company was born in 1935 thanks to Alcibiade Conti Zecca, who had an efficient and avant-garde cellar built. The family tradition has been passed down from generation to generation. The Mediterranean climate of the Salento peninsula is ideal for the growth of vines; constant sea breezes keep the grapes safe from pesticides and mineral-rich soils provide an ideal environment for the grapes. Venus Salento PGI Rosato is made up of 70% Negroamaro grapes and the remaining 30% from other vines. After soft pressing, maceration takes place for 12 hours. This is followed by the thermo-controlled fermentation of the flower must in stainless steel tanks; the maturation instead takes place in cement tanks.
