Vermentino Vendemmia Tardiva Vigna Fiorini is an IGT white wine produced by Cantina Vignaioli del Morellino di Scansano, a Tuscan wine cooperative founded in 1971 to enhance the terroir with superior quality wines. This label is the result of a late harvest and takes shape from the blend of Vermentino (85%) and Viognier (15%) grapes, the result of a single vineyard cultivated 120 meters above sea level, on sandy soil and rich in silt. A version, that of Vermentino Vendemmia Tardiva Vigna Fiorini, which uses over-ripening on the plant. At the end of September, the two grape qualities are harvested and processed separately. Once in the cellar, they are first subjected to a maceration process, then to a long pressing. The decantation of the must and the fermentation follow, after which the wine ages in steel on the fine lees for just over 3 months, after which it is bottled. Before being marketed, it is still refined in glass. The end result is a white to be drunk young, within 2 years of the harvest. A label with a dry sip, which emerges for its pleasant freshness and its good fruity persistence.
