The Veneto Rosso Passito Dolce IGT Vigna Seré is a sweet wine signed by the Dal Forno winery, one of the most prestigious for the production of Amarone, by far. This wine is obtained from a very interesting blend of native vines of the area, which include Corvina (55%), Croatina (20%), Rondinella (15%) and finally Oseleta (10%). All these regional varieties, present in the proportion that faithfully represents how widespread and cultivated they are in the Veneto region, contribute to making this wine an extraordinary and original example of passito. The grapes are carefully selected by hand and left to dry for a period of four months in a loft. They are then pressed in January and left to ferment at a controlled temperature. Then follows a three-year aging in barriques on the first passage and the whole is completed with a further refinement in the bottle for two years. The Veneto Rosso Passito Dolce IGT Vigna Seré is an extraordinary passito, concentrated, intense, complex, of an unthinkable persistence and richness, someone has called it a masterpiece of enology. Sublime as a meditation wine, it goes perfectly with very dark chocolate.
